The Good Place Special
Food from The Good Place (and, well, everything else from The Good Place) reads like a fever dream: giant shrimp terrorizing the neighborhood, fountains of clam chowder, frozen yogurt in every conceivable flavor. Today, we're seeing if we can make some of these bizarre concoctions palatable - and throwing in some jalapeño poppers for good measure.
Ingredients
Peeps and M&M’s Chili (Champorado)
1 ½ cups rice (sticky, sushi or arborio)
2 ½ cups water
2 ½ cups evaporated milk
⅓ cup unsweetened cocoa powder
Salt
⅓ cup granulated sugar
4 ounces dark chocolate
1 tsp vanilla extract
1 tsp espresso powder
Sweetened condensed milk
Peeps, chopped (optional)
M&M’s (optional)
White Chocolate Shrimp
1 Egg
1 cup milk
1 cup flour
1 cup breadcrumbs
Shrimp, peeled and deveined
Vegetable oil
1 small shallot, minced
2 Tbsp white wine
2 Tbsp white wine vinegar
1-2 Tbsp heavy cream
1 cup butter, cut into chunks
4 ounces white chocolate
Jalapeno Poppers
Jalapenos, halved and hallowed
8 ounces cream cheese
8 ounces pepper jack cheese, shredded
1 Egg
1 cup milk
1 cup flour
1 cup breadcrumbs
Vegetable oil
Method
Peeps and M&M’s Chili (Champorado)
Into a large pot add 1 ½ cups of rice along with 2 ½ cups of water, 2 ½ cups of evaporated milk, ⅓ cup unsweetened cocoa powder, a pinch of salt, and ⅓ cup granulated sugar. Over medium heat bring that whole mixture to a boil and then turn the heat to medium low and simmer for 15-25 minutes. Stir occasionally.
When the rice is nearly done, add 4 ounces of dark chocolate and stir to combine until the chocolate is melted, then add 1 tsp each vanilla extract and espresso powder. Mix to combine.
Add to a bowl and top with some sweetened condensed milk. Optionally add some chopped peeps and M&M’s, but you might be better off leaving those out. Enjoy!
White Chocolate Shrimp
Prepare your breading station by adding 1 egg mixed with 1 cup of milk in one bowl, 1 cup of flour in your second bowl, and 1 cup of breadcrumbs in your third bowl.
Coat the shrimp first in your flour, followed by the egg and milk mixture, and then into your breadcrumbs. Make sure they are fully coated and then set onto a plate.
Once all of your shrimp are coated, add vegetable oil to a pot and bring to 375°F. Add shrimp and cook each shrimp for 2-3 minutes or until golden brown. Remove from oil and set on a paper towel.
For the butter sauce, add 1 small minced shallot to a pan along with 2 Tbsp white wine, 2 Tbsp white wine vinegar, and 1-2 Tbsp of heavy cream.
Cook over a medium heat until almost all the liquid has entirely reduced and then turn the heat down to a low heat. Add 1 cup of butter, a few chunks at a time. Once all the butter is added, remove from the heat but keep whisking to combine until a thick smooth sauce has been created.
For the white chocolate sauce, follow all the steps above but instead of 1 cup of butter, just add 4 ounces of butter along with 4 ounces of white chocolate. Mix to combine. If the sauce starts to break, just add a few Tbsp of heavy cream.
Serve with the fried shrimp and enjoy!
Jalapeno Poppers
Start by halving and hallowing your jalapenos. In a bowl combine 8 ounces of cream cheese with 8 ounces of shredded pepper jack. Mix to combine, and then scoop the mixture into each jalapeno half.
Prepare your breading station by adding 1 egg mixed with 1 cup of milk in one bowl, 1 cup of flour in your second bowl, and 1 cup of breadcrumbs in your third bowl.
Add your jalapenos and to the flour mixture and then place them on a wire rack and let sit for 10 minutes.
Next, add them to the egg and milk mixture followed by the bread crumb mixture and then let sit on a wire rack for 45 minutes. Repeat this so they are coated twice before.
Preheat a pot with vegetable oil to 375°F and add jalapenos. Cook for 2-3 minutes before removing and placing on a wire rack to cool.
Serve and enjoy!
